In just twenty minutes, from start to finish, and only five ingredients, this meal is ready to go with minimal effort and time! We use John Soules Foods’ new refrigerated breaded chicken to make dinner time that much easier.
The crispy and lightly breaded chicken is kept in the refrigerator instead of the freezer, so no time is wasted defrosting it! It makes for a simple and delicious meal any time of the week, especially on those extra busy nights or when you’ve had a long day and do not feel up to spending an hour making a home-cooked meal and then just as long cleaning it up!

INSTRUCTIONS
- First, preheat the oven to 375 degrees F and set the oven rack in the middle position.
- Next, spread all but one cup of the marinara sauce in the bottom of a 9×13-inch baking dish.
- Set six chicken cutlets on top of the sauce. Evenly spread the remaining sauce over the chicken.
- Top with Parmesan and mozzarella cheese, spreading evenly over the sauce.
- Bake the dish for fifteen minutes.
- Meanwhile, split the hoagie rolls in half and place them, cut side up, on a baking sheet lined with foil. Brush the rolls with olive oil.
- After removing the chicken from the oven, turn the oven to broil.
- Put the hoagie rolls under the broiler until golden brown. This should only take one to two minutes.
- After removing the rolls from the oven, spoon some sauce on the bottom of the roll and then add a chicken cutlet on top.
- Finally, add 2-3 basil leaves on top of the chicken (optional) and add the top hoagie roll. Serve with a Caesar salad.
RECIPE VARIATIONS AND SUBSTITUTIONS
- This recipe translates exceptionally well to classic Chicken Parmesan. Instead of serving the chicken and sauce over hoagie rolls, serve it over your favorite pasta. If you go this route, you’ll need 1 ½ pound of pasta to serve six people.
- Sometimes we grate a whole zucchini squash and evenly distribute it between the chicken cutlets to add some extra veggies to the dish. You can do the same thing with steamed broccoli florets.
STORAGE TIPS
Serve: You can keep these out for about two hours before they need to be covered and stored in the refrigerator.
Store: Store the baked chicken and sauce in an airtight container in the refrigerator for 2-3 days. Store the toasted hoagie rolls in an airtight container at room temperature for 2-3 days.
Freeze: Transfer the chicken and sauce to a freezer-safe container. Freeze for 1-2 months.
Thaw: Thaw overnight in the refrigerator or for about 3 hours at room temperature.
Reheat: Reheat the chicken and sauce in the microwave until heated through. Alternatively, reheat in a 350-degree oven for 10-15 minutes or until heated through.

Our chicken parmesan sub is made using a soft hoagie roll topped with marinara sauce, John Soules Foods Fully Cooked Chicken Cutlets, and parmesan cheese.
These two dishes are the same thing with a different name! Both are an all-American classic.
We like to serve our Caesar Salad with this dish. But this Asparagus in the Oven, this Instant Pot Corn on the Cob, or this Fresh Green Beans Almondine would also work well alongside this dish.
GET KIDS INVOLVED
Ages 2-3: Let your little one help spread the parmesan cheese over the chicken cutlets. You can also practice counting skills as they lay the cut hoagie slices on the baking sheet.
Ages 4-5: Your child can help by spreading the marinara sauce over the bottom of the pan and then placing the chicken cutlets on top of the sauce. This is an excellent opportunity to teach proper food handling safety, focusing on washing hands well before and after handling food.
Ages 6-8: Your child can gain confidence in the kitchen by independently doing most of this recipe. You can assist with slicing the hoagie rolls, but they can do everything else with your guidance.
Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe.
Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

Ingredients
- 24 oz bottle Marinara sauce
- 6 John Soules Foods Fully Cooked Chicken Cutlets you'll need 1 ½ (12 oz) packages
- ¼ cup grated Parmesan cheese
- 1 ¼ cup grated mozzarella cheese
- 6 hoagie rolls
- 3 Tablespoons olive oil
- Fresh basil leaves optional
FOR SERVING:
- Caesar salad optional
Instructions
PREP AND PREHEAT THE OVEN:
- Move the oven rack to the middle position and preheat the oven to 375 degrees F.
ASSEMBLE THE CHICKEN PARMESAN:
- Add all but 1 cup of the marinara sauce to the bottom of a 9×13-inch glass baking dish.
- Add 6 chicken cutlets on top of the sauce.
- Evenly distribute the remaining 1 cup of sauce over the chicken cutlets.
- Evenly distribute the Parmesan and mozzarella cheese over the sauce.
BAKE AND BROIL:
- Bake for 15 minutes.
- While the chicken parmesan is baking, split the hoagie rolls in half and place them on a foil-lined baking sheet. Place them, so both of the cut sides of the bread are facing up.
- Brush the rolls with olive oil.
- Once the chicken comes out of the oven, heat the broiler to HIGH.
- Place the hoagie rolls under the broiler until they’re golden brown, about 1-2 minutes. Watch them carefully, because they can go from golden brown to burnt in a matter of seconds!
TO FINISH:
- Spoon some of the sauce on the bottom of a hoagie roll.
- Add a chicken cutlet on top.
- Add 2-3 basil leaves (optional), and add the top hoagie roll.
- Serve with a Caesar salad (optional) and enjoy!
