Instant Pot Pulled Pork
We recently went on a week-long camping trip and needed some easy camping recipes on our menu. This Instant Pot Pulled Pork recipe was at the top of our list.
We made it beforehand and froze it. Then all we had to do was warm it up and serve it on the buns.
It is so hands-off and makes the perfect meal for camping, pot-lucks, busy weeknights, family get-togethers, or summer BBQs. You can feed and WOW any crowd with this meal.
The meat is exceptionally tender and juicy, with an added kick from the green chilies. Using store-bought BBQ sauce (our favorite is Sweet Baby Ray’s Honey Chipotle) makes this recipe that much easier.
Throw the meat in the Instant Pot with the other ingredients, and in just a short amount of time, you will have the BEST-Pulled Pork Sandwiches that are a little bit sweet, a little bit spicy, and a lot delicious!
What is the best pork to use for pulled pork sandwiches?
A pork shoulder is a typical cut for pulled pork. It sometimes referred to as pork butt. You can also use pork loin for pulled pork.
PRO TIP: We like to buy our pork loin at Costco, cut it in half, and freeze half of the pork for later.
What is good with pulled pork sandwiches?
We usually keep it simple and just serve a bag of potato chips and some coleslaw to complete this meal. However, our all-time favorite side dish to serve with these sandwiches is our Instant Pot Mac and Cheese.
How much pork do you need for pulled pork sandwiches?
On average, a whole pork loin weighs around 8-10 pounds. Ten pounds of meat can make about 30 sandwiches.
Keep in mind that pulled pork is even better the next day, so this will make for excellent leftovers, or you can make half of the pork and freeze the rest for later.

How to make Instant Pot Pulled Pork recipe:
STEP ONE: First, make the sauce by adding all the sauce ingredients into a bowl. Now, stir the ingredients together.
STEP TWO: Cut the pork into three pieces. Then set it in the Instant Pot. Pour the sauce over the pork. Place the lid on the Instant Pot and seal it. Cook on HIGH pressure for one hour. Then let the pressure release naturally for 15 minutes before removing the lid.
STEP THREE: Next, place the pork in a medium bowl. Remove any fat that you can see.
STEP FOUR: Use two forks to shred the pork.
STEP FIVE: After that, press the saute button on the Instant Pot and keep pushing it until “more” is selected. Cook the sauce until thickened, for about 10-15 minutes.
STEP SIX: Finally, pour the sauce over the pork and serve.

The Flavor and Recipe Variations
Use your favorite store-bought BBQ sauce for this recipe. Adding coleslaw directly onto the bun gives a sweet and crunchy addition to your sandwich.
How long is it suitable for:
Serve: You can keep the pork at room temperature for up to 2 hours before you will need to refrigerate it.
Store: Leftover will keep in an airtight container in the refrigerator for up to 4 days.
Freeze: Place the pulled pork in a freezer-safe Ziploc bag and freeze for up to 3 months.
How to get the kids involved with this recipe:
Ages 2-3: Let them help dump the ingredients into the Instant Pot. They can help count the items you are putting in.
Ages 4-5: Have your kiddo help measure out the ingredients to pour into the Instant Pot.
Ages 6-8: Teach your child how to turn on and set the Instant Pot and to secure the lid properly. Also, teach him to change the Instant Pot setting to saute and stir the sauce as it cooks and thickens.
Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe.
Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

Ingredients
PORK:
- 4 pounds pork loin
SAUCE:
- 1 cup packed brown sugar
- 1 cup BBQ sauce we used Sweet Baby Ray’s
- ¾ cup mild green chilies
- 2 teaspoons salt
Instructions
CUT PORK:
- Cut the pork loin into three pieces.
MAKE SAUCE:
- In a medium bowl add all of the sauce ingredients and stir to combine.
LOAD UP INSTANT POT:
- Place the pork in an Instant Pot and then pour the sauce over the pork.
COOK:
- Secure the lid on the Instant Pot and turn the dial to “seal”.
- Cook on HIGH pressure for one hour. Let the pressure release naturally for 15 minutes, and then turn the dial to “venting”.
SHRED PORK:
- Move the pork to a medium bowl and remove any visible fat.
- Use two forks to shred the meat.
THICKEN SAUCE:
- Press the “saute” button on the Instant Pot and keep pressing it until “more” is selected.
- Cook the sauce until thickened, about 10-15 minutes (please note that it will thicken up a little more as it cools).
TO FINISH:
- Pour the sauce over the pork. Serve.
