Slow Cooker Pot Roast is a Sunday dinner classic. We love the slow cooker’s convenience because you throw everything in, and your beef roast dinner is ready a few hours later.

Easy Slow Cooker Pot Roast

A meal with little prep but full of hearty, comforting goodness is our kind of meal. That is exactly what this Slow Cooker Roast Beef with potatoes and carrots offers. The meat is so tender it falls apart and makes the perfect weeknight meal for those busy days and nights.

This recipe is so easy to put it all in the crockpot in the morning and then walk into a delicious meal later that day. Not only is this meal perfect for weeknight meals, it also makes a great Sunday dinner.

We remember our Mom making this meal often for us to enjoy as a family. To this day, it is still one of our Dad’s favorite meals!

There is just something about a Beef Pot Roast cooking in the slow cooker all Sunday morning that gives us all the feels as we think about it. Gathering around the table to enjoy the flavorful meat with the tender and perfectly cooked veggies is what dinner time should be!

Do you have to brown a roast before putting it in the crockpot?

You can most definitely brown the roast before placing it in the crockpot. It can definitely enhance the flavors and give a caramelized crusty outer edge to the roast. However, it is not a requirement in this recipe. You can still have a tender, flavorful piece of meat without browning the roast. 

Can you overcook beef in a slow cooker?

Cooking beef on low and slow in a slow cooker is a fantastic way to get a tender piece of meat. The trapped steam is what helps tenderize the beef. However, it is possible to overcook the meat if cooked for much longer than what the recipe calls for. 

What is the best cut of meat for slow cooker pot roast?

Our favorite cut of meat to use for this recipe is a chuck roast. A chuck roast has fantastic marbling that results in a tender and juicy cut of meat after cooking in the slow cooker all day.

3-pound beef roast – $16.41

1-2 cups beef stock – $0.48

2 large russet potatoes – $0.96

1 large onion – $0.70

3 carrots – $0.42

2 Tablespoons garlic powder – $0.20

1 Tablespoon sea salt – $0.13

How to make Slow Cooker Roast Beef recipe: 

STEP ONE:  First, mix the seasonings in a small bowl. Divide it into two equal portions.

STEP TWO: Next, massage one portion of the spice rub over the beef. Then place the beef into the crockpot and pour one cup of beef stock around the roast.

STEP THREE: Add in the vegetables and sprinkle the second half of the spice rub over the beef. 

STEP FOUR: Cook in the slow cooker for eight hours. After cooking, remove the roast from the crockpot and allow it to rest for ten minutes before shredding the roast.

The Flavor and Recipe Variations

You can use a variety of vegetables as you would like in this recipe. Besides russet potatoes, carrots, and onions, we like parsnips, yams or sweet potatoes, any variety of potatoes, and fennel. 

How long is it good for:

Serve: The finished pot roast can sit out for no longer than 2 hours before it will need to be refrigerated. 

Store: Leftovers will keep in an airtight container in the refrigerator for up to 3 days. 

Freeze: You can freeze the slow cooker pot roast for up to 3 months in the freezer. Transfer the cooled meat to a freezer-safe Ziploc bag and pour in some of the cooking liquid. Seal the bag and freeze. 

How to get the kids involved with this recipe:

Ages 2-3: Let your kiddo help massage the beef roast with the spice rub. They will think this is fun!

Ages 4-5: Have your little one help measure out the ingredients for the spice rub. Your child can also put the vegetables and broth into the slow cooker. 

Ages 6-8: Teaching proper knife safety; let your child cut up the vegetables. 

Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe. 

Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

Ingredients

ROAST AND VEGETABLES:

  • 3-4 pound Beef Roast
  • 1-2 cups beef stock
  • 2 large Russet Potatoes cut into cubes
  • 1 large onion cut into medium chunks
  • 3 large carrots peeled and cut into 1⁄2 inch pieces

SPICE RUB:

  • 2 tablespoons garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon sea salt
  • 1 ½ teaspoon ground black pepper

Instructions

MAKE SPICE RUB:

  • In a small bowl, mix the garlic powder, paprika, sea salt, and ground pepper. Massage half of the spice rub over the beef

PREP BEEF:

  • Place the beef into the crockpot and pour 1 cup beef stock around the beef roast.
  • Add the vegetables to the crockpot and sprinkle the remaining spice rub over the beef and vegetables.

SLOW COOK:

  • Cover and cook for 8 hours on LOW or until the internal temperature reaches 145 degrees F.
  • Add more beef stock throughout cooking if needed.

SERVE:

  • Remove the beef roast from the slow cooker and allow it to rest for 10 minutes before shredding. Serve with the vegetables.

Notes

You can easily increase the servings to 8 using a 4-pound roast and adding a few more veggies.
