Every weekend I menu plan for the next week. I do my online shopping on Friday for pick-up on Saturday morning. That’s my weekly routine.

Recently my husband and I took on a major home renovation project and my house became a disaster in a matter of hours! My kitchen was covered in plastic and several layers of dust.

On my menu that night was Baked Spaghetti. While it’s a delicious and easy recipe, it’s not the best option for when your kitchen is in disarray! I quickly changed gears and opted to make this Crock Pot White Chicken Chili recipe instead. 

Crock Pot White Chicken Chili

This Crock Pot White Chicken Chili literally saved the day! All of the ingredients are staple pantry items. I was able to throw everything in the Crock Pot and walk away. 

Add this to your recipe toolbox. It will be perfect for busy nights when you can’t get to the store to get fresh ingredients, or when you decide the day of to do a major home renovation! 

This Crock Pot White Chicken Chili is so easy, you may just wonder what to do with all your extra time. Maybe pull up all the tile in your house?! Just kidding, you probably don’t want to decide to do that. 😅

Crock Pot White Chicken Chili Recipe Questions Answered:

Do you have to brown ground chicken before slow cooking?

If you are using fresh chicken you should brown it before adding it to the slow cooker. Our pantry recipe uses canned chicken which comes pre-cooked so it is necessary to brown it before adding it to the Crock Pot. 

How do you make crock pot chicken chili thicker?

If you need to thicken your chili you can mix 1 Tablespoon of cornstarch into 2-3 Tablespoons of water or chicken broth. You will want to first stir it until the cornstarch is dissolved in the liquid. Then, stir this mixture into the chili and cook until it reaches the consistency you like. 

What goes with Chicken Chili?

A few simple and quick ideas to serve as a side are:
  1. Frito or Tortilla Chips
  2. Cheese Quesadillas
  3. Guacamole
  4. Cornbread

How to Make Crock Pot White Chicken Chili Recipe:

  1. First, throw all of the ingredients except for the sour cream and toppings into a slow cooker.
  2. Cook on LOW for 6-7 hours. 
  3. Stir in the sour cream until combined.
  4. Serve in bowls with additional toppings if desired. 

How to get the kids involved with this recipe:

  • Ages 2-3: Have them help you rinse and drain the beans. 
  • Ages 4-5: Teach them how to level off ingredients in measuring spoons. They can also help you dump the ingredients into the Crock-Pot. 
  • Ages 6-8: Teach them how to use a can opener the correct way and have them help you open all of the cans. They can also help you set the timer for the cooking time. 
  • Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe. 
  • Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

How long is this good for:

  • Serve: As with most recipes with dairy products in them, you shouldn’t leave this Pantry Crock Pot White Chicken Chili out for longer than 2 hours. 
  • Store: Leftover will keep in an air-tight container in the refrigerator for 4-5 days. 
  • Freeze: Because of the sour cream in the soup, we do not suggest freezing this recipe.

WHITE CHICKEN CHILI:

  • 3 cups chicken broth
  • 2 15-ounce cans pinto beans, rinsed and drained
  • 2 12.5-ounce cans chicken, drained
  • 2 4 oz cans diced green chiles
  • 15 ounce can corn drained (can also 1 cup fresh or frozen corn)
  • 2 teaspoons onion powder

Instructions

  • Place all of the ingredients, except for the sour cream and toppings, in a slow cooker. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Stir in the sour cream until combined.
  • Ladle into soup bowls and add toppings (if using).

    I had no idea white chili could be so easy to make. I’ve eaten my sisters white chili several times over the years but thought it probably took a long time to make. So glad to learn otherwise.

    Do you think I could substitute cream cheese for the sour cream? My husband doesn’t usually like sour cream…

      Yes you can use cream cheese we would just recommend that it is room temperature and wait to add it in until the last hour of cooking. Thanks!
