We love when we get to make a new meal out of leftovers from another dinner. This Pineapple Fried Rice recipe is the perfect way to create an entirely new dish with your leftover Easter ham. Because, honestly, you can only eat so many ham sandwiches!
This dish combines sweet pineapple and a spicy sriracha-based sauce and many other veggies, ham, and rice. The ingredients are fried with eggs in one skillet creating a quick and easy weeknight meal.

HOW TO MAKE PINEAPPLE FRIED RICE
- First, make the sauce in a small bowl by whisking together the soy sauce, sesame oil, and Sriracha. Set the bowl aside.
- Next, using a large skillet, heat the vegetable oil and then add the ham, bell pepper, green onion whites, and yellow onion and cook for about 7-9 minutes.
- Add the garlic and ginger and cook for about 30 seconds.
- Then, add the eggs to the skillet and stir them into the other ingredients, constantly stirring for about three minutes, until the eggs are cooked.
- Add the rice and soy sauce and stir until it is mixed together.
- Finally, turn off the heat and stir in the pineapple and remaining green onions before serving.

RECIPE VARIATIONS AND SUBSTITUTIONS
- Make this vegetarian by taking out the protein. Or switch out the ham for another protein such as shrimp or chicken.
- Instead of white rice of you can use brown rice or Jasmine rice.
STORAGE TIPS
SERVE: You can keep the fried rice out for about two hours before it needs to be stored in the refrigerator.
STORE: Store leftovers in an airtight container in the refrigerator for five days.
FREEZE: Place the cooled rice in a freezer-safe container or zipper-top bag and freeze for up to 3 months.
DEFROST: Defrost in the refrigerator overnight.
REHEAT: Place the Pineapple Fried Rice in a microwave-safe dish and re-heat on HIGH in the microwave for 1-minute. Stir and repeat until heated through.

FOR THE SAUCE:
- ¼ cup soy sauce
- 3 Tablespoons toasted sesame oil

Instructions
MAKE SAUCE:
- In a small bowl whisk together soy sauce, sesame oil, and Sriracha and set aside.
MAKE FRIED RICE:
- In a large 12-inch skillet, heat vegetable oil over medium-high heat until just smoking. Add ham, bell pepper, green onion whites, and yellow onion and cook, stirring occasionally until lightly browned, 7-9 minutes.
- Add garlic and ginger, stir and cook until fragrant, about 30 seconds.
- Add eggs to the skillet and stir them into the other ingredients.
- Stir constantly until eggs are cooked, about 3 minutes.
- Add rice and soy sauce mixture to skillet, stir until combined, and rice is heated through.
TO FINISH:
- Turn off heat and stir in pineapple and remaining green onions.
- Serve immediately.
