How To Make Smoked Chicken Nachos
We use a wood pellet grill for most of this process. This recipe assumes you have a Traeger smoker/grill. If you’re unsure which pellets to use, stick with the Traeger signature blend!

- Preheat the smoker to 350 degrees F.
- Spread a layer of tortilla chips on a large baking sheet or cast iron skillet.
- Add a layer of shredded smoked chicken over the chips.
- Sprinkle black beans and corn on top of the chicken.
- Add a layer of shredded cheese.
- Repeat the layers.
- Add pickled jalapenos and red onions on top.
- Place the baking sheet on the preheated smoker and cook for about 15-20 minutes or until the cheese is melted and bubbly.
- Serve immediately with toppings of your choice.
Recipe Variations and Substitutions
- You can easily adjust the ingredients and topping to your liking. Add other toppings like diced tomatoes, avocado, or green onions.
- Instead of chicken, you can use shredded pork, ground beef, smoked brisket, etc.
Storage Tips
SERVE: As stated, these nachos are best served hot and immediately—no need to wait for them to cook longer off the smoker like many other recipes.
STORE: Store any leftovers you have in the fridge. They’ll remain fresh for 3-4 days in a proper container.
FREEZE: Smoked chicken nachos will remain fresh in an airtight container or bag for about three months.
REHEAT: These will reheat in the oven or stovetop after thawing in the fridge overnight.

Get Kids Involved
Ages 2-3: Teach your littlest cooks the names of various small utensils and tools (like the baking sheet) as they grab them for you!
Ages 4-5: At this age, they’ll love sprinkling toppings on everything and putting down a layer of chips on your baking sheet. They can also add additional topping when you’re ready to serve like sour cream, salsa, etc.
Ages 6-8: Many kids in this age group may be able to prep the recipe to put it in the smoker. (That is to say, they can make their own layers! They’ll appreciate customizing their meal, trust us.)
