This Oven Roasted Red Potatoes recipe is a fool-proof recipe that’s simple and delicious. These are great for weeknight dinners and holidays like Christmas, Easter, and Thanksgiving!

Are you in need of a super easy side dish that is packed full of flavor? Who isn’t! This Oven Roasted Potatoes recipe is the perfect side dish for a holiday dinner or a great option to serve at a family dinner or to go along with any weeknight meal. 

The preparation is a cinch! You can easily make this recipe while making the main dish at the same time. 

Roasting these potatoes in an oven gives you crispy edges with creamy centers. The olive oil gives the outer layer the crisp texture while the high heat of the oven makes the inside of the potato soft. Topping the potatoes with the simple herbs makes these Oven Roasted Potatoes sweet to taste! 

How do you make roast potatoes crispy?

Roasting the potatoes in the oven at high heat for 40-50 minutes will result in a crispy outer layer with a soft and creamy inside that will be hard to resist. 

Why are my roast potatoes not crispy?

One reason could be because the potatoes are still wet from soaking them. The potatoes will crisp up better the drier they are. Be sure to dry them well after draining the water.

All of the ingredients needed to make oven roasted red potatoes.

  • 2 pounds of small red potatoes – $1.79
  • 2 Tablespoons of Olive Oil – $0.28
  • 1 teaspoon garlic powder – $0.03
  • 1 Tablespoon fresh parsley – $0.06
  • 2 teaspoons fresh thyme – $0.17
  • 2 teaspoons fresh rosemary – $0.16
  • 1/2 teaspoon Kosher salt – $0.01
  • 1/2 teaspoon ground black pepper – $0.03

How to roast red potatoes in the oven: 

STEPS ONE AND TWO:  First, prepare the potatoes by cutting them in half or quartering them. Place the potatoes in a bowl of water for 30-60 minutes.

STEPS THREE AND FOUR: Next, preheat the oven to 375 degrees. Then drain the potatoes and pat dry with a paper towel. After drying the potatoes, spread them evenly on a baking sheet. Drizzle with olive oil and toss to coat.

STEP FOUR: In a small bowl, combine the garlic powder, herbs, salt, and pepper until well combined. Place the mixture over the potatoes and toss to coat. 

STEP FIVE: Finally, bake for 40-50 minutes and serve immediately.

The Flavor and Recipe Variations

If you don’t have the fresh herbs that you need for this recipe, then you can use dried herbs. Use 1 teaspoon dried parsley, 1/2 teaspoon dried thyme, and 1/2 teaspoon dried rosemary. 

How long is it good for:

Serve: These will keep at room temperature for up to 2 hours. 

Store: Keep leftovers in an airtight container in the refrigerator for 3-5 days.

Freeze: You can freeze the roasted potatoes by cooling them once baked and then place them in a freezer-safe Ziploc bag. You can freeze them for up to 6 months this way. To reheat, thaw the potatoes in the refrigerator overnight and cook on HIGH in the microwave at 2-minute intervals.

How to get the kids involved with this recipe:

Ages 2-3: Let them help pour the herbs over the potatoes to prepare for baking. 

Ages 4-5: Have your kiddo help measure out the ingredients for the herbs. They can also drizzle the oil over the potatoes.

Ages 6-8: Teach your child proper knife safety and let them help you cut the potatoes in half and in quarters. They can also help pat dry the potatoes with a paper towel. 

Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe. 

Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

Ingredients

  • 2 pounds small red potatoes
  • 2 Tablespoons olive oil
  • 1 Tablespoon fresh parsley chopped finely
  • 2 teaspoons fresh thyme chopped finely
  • 2 teaspoon fresh rosemary chopped finely
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

  • grated Parmesan cheese

Instructions

PREP POTATOES:

  • Rinse the potatoes and cut them in half (quartered them if they’re on the large side).
  • Transfer potatoes to a large bowl and cover them with water. Let them sit in the water for 30-60 minutes.

PREP OVEN:

  • Move the oven rack to the middle position and preheat to 375 degrees F.

SEASON POTATOES:

  • Drain the potatoes and pat them dry with paper towels.
  • Spread the potatoes into an even layer.
  • Drizzle olive oil over the potatoes and use your hands to coat them in oil.
  • In a small bowl, stir together fresh herbs, garlic powder, salt, and pepper.
  • Sprinkle the herb mixture over the potatoes and use your hands to coat the potatoes.

BAKE:

  • Bake for 40-50 minutes or until the potatoes are fork-tender and the edges of the potatoes have the desired amount of browning/caramelization on them.

GARNISH AND SERVE:

  • Garnish with grated Parmesan cheese (if using) and serve.

    Rats! I could have used this recipe 2 days ago. Instead I heated the red potatoes in the microwave and put sourcream on top. I love the idea of crunchy oven baked ones. I’ll try next time!
