How To Make Egg Muffins
- First, preheat the oven to 350 degrees F. Then lightly spray a muffin pan with non-stick cooking spray.
- Next, cook the sausage over medium heat and drain on a paper towel-lined plate.
- Then, cook the bacon in the skillet until it is crispy. Move the bacon to a paper towel-lined plate to drain.
- Whisk the eggs together in a large bowl.
- Then mix in the green pepper, chives, and cheese.
- Next, stir in the seasonings.
- Spoon about ⅓ cup of egg mixture into the prepared muffin pan.
- Finally, bake for twenty to twenty-five minutes. Serve and enjoy!

SERVE: You can keep these out for no more than two hours before they need to be covered and refrigerated.
STORE: Place in an airtight container in the refrigerator for three days.
FREEZE: Cool baked egg muffins completely. Place them on a baking sheet lined with parchment paper and freeze until firm, about 60-90 minutes. Transfer them to a freezer-safe resealable bag and freeze for 3-4 months.
REHEAT FROM FROZEN: Microwave on high for 60-90 seconds or until heated through.

Instructions
PREP OVEN AND PAN:
- Move the oven rack to the middle position and preheat the oven to 350 degrees F.
- Lightly spray a standard-sized muffin pan with non-stick cooking spray.
COOK MEATS:
- In a large skillet, cook sausage over medium heat until no pink remains, breaking into crumbles.
- Remove to drain on a paper towel-lined plate.
- Add bacon to skillet and cook until crispy.
- Remove to drain on a paper towel-lined plate.
MAKE EGG MIXTURE:
- In a large bowl, whisk eggs until completely smooth.
- Add green pepper, chives, and cheese.
- Stir to combine.
- Add seasonings and mix well.
BAKE:
- Spoon about ⅓ cup of egg mixture into the prepared muffin pan.
- Bake for 20-25 minutes or until a knife inserted in the center comes out clean.
- Serve immediately.
