Red Velvet Waffle Recipe Questions Answered:
What does buttermilk do to waffles?
The acid in buttermilk creates a reaction with baking soda causing the waffles to rise more. This rising, or increased thickness of the waffle, allows air pockets to be created by the reaction of the acid and baking soda when the heat is applied. This results in a fluffier waffle.
What is the difference between buttermilk and homestyle waffles?
One difference between buttermilk and homestyle waffles is the taste. Buttermilk waffles have a somewhat sour taste and have a fluffy texture.
Can I make buttermilk?
Absolutely! In fact, I usually make it instead of buying it because I never typically use the whole bottle of buttermilk. For each cup of buttermilk, just mix together 1 tablespoon of white vinegar plus enough milk to fill 1 cup. Let it stand for 5 minutes and then use it in your recipe instead of pre-made buttermilk.
