Instructions
COOK GROUND BEEF:
- In a large Dutch oven, brown ground beef until no pink remains.
- Move beef to a paper towel-lined plate to drain.
COOK VEGETABLES:
- Melt one tablespoon of butter in the Dutch oven.
- Saute onions, carrots, and celery until soft, about 5 minutes.
- Season with basil, parsley, salt, and pepper.
COOK SOUP:
- Add beef, potatoes, and chicken broth.
- Bring to a boil, then reduce to a simmer, cover, and cook for 10-12 minutes or until potatoes are tender.
MAKE CREAM MIXTURE:
- In a small saucepan, melt the remaining three tablespoons of butter.
- Whisk in flour and cook for 3-4 minutes. Whisk constantly.
- Add the flour mixture to the soup and bring back up to a boil.
- Cook for 2-3 minutes, and reduce to simmer over low heat.
TO FINISH:
- Stir in cheese and milk, stirring constantly until cheese is melted and soup is thickened.
- Remove from heat and whisk in sour cream.
- Serve immediately with toppings of your choice.
