Fluffy German Pancakes
This is a great recipe to add to your favorite breakfast recipes, because it’s quick to make and delivers a fluffy pancake with delicious buttery flavor. It’s made with simple ingredients like eggs, all-purpose flour, salt, and butter. There’s no standing over the stove flipping pancakes, because the batter bakes in the oven.
As it bakes, the batter magically puffs up and turns golden brown, giving you that classic Dutch baby pancakes texture everyone loves. They get so puffy, my family called them Puffed Pancakes, growing up. Serve them with a dollop of whipped or whipping cream, a sprinkle of fresh berries, blueberries, or blackberries, and a drizzle of maple syrup for a delicious, kid-friendly breakfast. Â
Recipe Tips for Success
My mom taught me how to make this easy German Pancake recipe. I’ve been making it for years and have made all the mistakes, so you don’t have to!
Avoid opening the oven door during baking. It can be tempting, but even a quick peek releases too much heat and can cause the rising pancakes to deflate. Use the oven lights to watch the magic happen.
Mix the ingredients well. Mix for at least 20–30 seconds to aerate the batter and achieve maximum puff thoroughly.
Add toppings. I like to sprinkle powdered sugar over the entire dish after removing it from the oven. You can then garnish with berries and syrup.
Ingredients & Estimated Cost:

- Eggs (6 – $1.18): Cold eggs can reduce the rise. Use room temperature eggs for the best results.
- Butter (6 Tablespoons – $0.84): Salted or unsalted butter will work.
- Milk (1 cup – $0.25): Any milk but skim milk will work.Â
- Flour (1 cup – $0.10): Spoon and level when measuring flour for accurate measurement. Too little or too much flour can impact the overall taste and texture of the pancakes.Â
- Salt (Just a pinch – $0.01): You only need a little salt to enhance the pancakes’ overall flavor.
The recipe cost is calculated based on the amounts needed and may vary due to fluctuating grocery costs.Â

German Pancake Recipe FAQs
They are similar to Dutch baby pancakes, but they are baked in the oven. They have a puffy texture, crispy edges, and a soft center.
There could be several culprits. Check your flour measurement, do not open the oven door while it is baking, and use room-temperature eggs.
This is totally normal. The magical puff will deflate slightly when removed from the oven.

I first made these in Middle School cooking class (decades ago, ha ha) SO DELICIOUS! We just top it with powdered sugar. This recipe has no leftovers in this house! LOL I bake it in my. cast iron skillet, that way I have a nice even puffed edge all around.
