Today we will dip baby dip (where are our 90s Hip Hop lovers at?!) into this amazing Cheesy Mexican Sausage Dip recipe. It will be love at first dip for you! The sausage mixed with the cheesy goodness makes for one amazing dip! It is seriously addicting!
This sausage dip is perfect for entertaining. It is easy to make and feeds a crowd. Just walk into the party telling everyone you have arrived with your “dip baby dip,” and we know everyone will want to have a bite of this Rotel Sausage Dip!
Do you drain Rotel for sausage dip?
Yes, after browning the sausage, you will want to drain off the extra grease before returning it to the stovetop to continue with the recipe.
Can you freeze cream cheese dips?
Not sure you will have any extra to freeze, but you can freeze leftovers for later. One tip, if you want to freeze it, is to use full-fat cream cheese. The higher the fat content in the dip, the less likely it is to separate after you freeze it.

How to Make Cheesy Mexican Sausage Dip Recipe:
First, brown and drain the sausage. Set the sausage aside.
Next, heat the tomatoes and cream cheese, stirring occasionally. Continue until the cream cheese is melted completely.
Finally, stir in the browned sausage, milk, and taco seasoning. Then add in the shredded cheese and stir until melted.

- If you like a bit more of a flavor and heat kick, add 2-3 cans of chopped green chiles.
- You can use pepper jack cheese instead of cheddar.
- To make this recipe a little healthier, you can use ground turkey breakfast sausage, reduced-fat cream cheese, and skim milk.
How long is this good for:
- Serve: As with most recipes with dairy products in them, you shouldn’t leave this cheesy sausage dip out for longer than 2 hours.
- Store: Place in the fridge in an airtight container for 4-5 days.
- Freeze: If you used full-fat cream cheese, you could freeze the dip in an airtight container for 2 weeks.
How to get the kids involved with this recipe:
- Ages 2-3: Let them help place the garnishes on top of the dip. They can also pour the chips into a serving bowl.
- Ages 4-5: Have them help mix in the ingredients after you have browned the sausage.
- Ages 6-8: Teach them how to brown the sausage being careful of oil splatters. Have your kiddo also mix in the shredded cheese.
- Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe.
- Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

Cheesy Sausage Dip
Equipment
- large deep skillet
- Wooden spoon
Ingredients
- 1 pound breakfast or hot pork sausage
- 1 cup milk
- 1 Tablespoon cornstarch
- 1 Tablespoon taco seasoning
- 10 ounce can Rotel with jalapenos if not jalapenos, then chiles, drained
- 8 ounces cream cheese softened
- 2 cup shredded cheddar
FOR SERVING:
- Bag of tortilla chips
Instructions
- Preheat a large, deep skillet over medium heat. Add sausage and break the meat apart with the back of a wooden spoon. Cook until browned, and then drain off fat.
- While the sausage cooks, add cornstarch to a small bowl with 2 Tablespoons of milk. Use a fork to mix together and set aside.
- Add taco seasoning, drained Rotel, cream cheese, cheddar, milk, and cornstarch mixture and stir until the cheese is melted and everything is combined about 2-4 minutes.
- Pour dip into a serving bowl and serve with tortilla chips.
