I have not tested this recipe using raw chicken. I developed it using cooked chicken. If you use raw chicken, you will need to increase the cooking time.
This is a great recipe to prep the night before and then set it to cook the next day.
Definitely, peas, carrots, or broccoli will all work well. Add them during the last hour of cooking to prevent overcooking.
