Recipe Tips
I developed this recipe to be an easy weeknight meal that everyone would enjoy. I created a few tips to help you cook it perfectly the first time you make it.
- Use uncooked long-grain white rice. Other types of rice require different amounts of liquid and cooking times, which I did not test in this recipe.
- Drain the green chiles and diced tomatoes. Excess liquid can make the casserole too runny.
- Use the cooking time as a guide and check the rice early. Every slow cooker cooks a little differently. The casserole is ready when the rice is tender and has absorbed most of the liquid.
- Stir the casserole once if needed while it is cooking. If you notice the rice cooking faster around the edges than the rice in the center of the casserole, quickly stir the casserole and replace the lid.
Ingredients & Estimated Cost
Here is everything you need to make this dish, along with a few substitution recommendations.

- Smoked Sausage (1 package – $2.97) – Kielbasa, turkey sausage, or chicken sausage will also work.
- Long-grain white rice (1 cup – $0.37) – I do not recommend substituting the rice due to differences in cooking time.
- Chicken broth (2½ cups – $0.93) – Substitute vegetable broth if needed.
- Diced green chiles (1, 4-ounce, can – $0.98) – Use chopped jalapeños as an alternative.
- Yellow onion (1 – $0.78) – A white onion will also work.
- Red bell pepper (1 – $1.52) – Use any variety of bell peppers.
- Frozen corn (1 cup – $0.45) – A can of corn works as long as you drain it first.
- Diced tomatoes (1, 14.5-ounce can – $0.92) – Fire-roasted tomatoes would also be delicious.
- Garlic powder (1 teaspoon – $0.05) – Substitute 2 minced garlic cloves.
- Cajun seasoning (1-2 teaspoons – $0.12) – Add to your flavor preferences. I liked 2 teaspoons.
- Paprika (1 teaspoon – $0.05) – Smoked paprika can also be used.
- Ground black pepper (½ teaspoon – $0.03) – Do not skip; it enhances the overall taste.
- Salt (½ teaspoon – $0.01) – Do not skip; it enhances the overall taste.
- Cheddar cheese (1 cup – $0.99) – Use your favorite type of cheese, such as Colby Jack, pepper Jack, or a Mexican blend.
The recipe cost is calculated based on the amounts needed and may vary due to fluctuating grocery costs.

Recipe FAQs
No, that is the beauty of using it in this recipe. It is already fully cooked, so you just slice it and add it to the crockpot.
No, add the rice uncooked, and it will cook in the chicken broth during the cooking process.
I recommend waiting to make this until you put it in the crockpot to cook. Otherwise, the rice may not reach the correct consistency if it sits in the liquid for too long.
