- 1 package smoked sausage sliced
- 1 cup uncooked long grain rice
- 2 ½ cups chicken broth
- 1 4 oz can green chilies drained
- 1 yellow onion diced
- 1 red pepper diced
- 1 cup frozen corn
- 1 can diced tomatoes drained
- 1 teaspoon garlic powder
- 1-2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon pepper
- ½ teaspoon salt
- 1 cup shredded cheddar cheese
Add the sausage, rice, broth, green chilis, onion, red pepper, corn, tomatoes, and seasonings to a crockpot and stir well.
Cook on low for 3-4 hours or high for 2 hours.
For the last 15 minutes, add in the cheddar cheese and mix until combined.
Garnish with parsley and serve and enjoy!
