DIY Breakfast Sandwiches

- 16 pieces of bacon cooked. I use the precooked bacon from Costco
- 8 slices of cheddar cheese
- 16 eggs
- ½ teaspoon salt
- ½ teaspoon pepper
- ⅓ cup softened salted butter
In a large bowl, whisk the eggs, salt, and pepper.
In a large skillet, cook the eggs over medium-high heat, mixing with a spatula until fluffy.
Slice the croissants in half and spread the butter on the bottom of the tops.
On the bottom half of the croissant layer with eggs, then a slice of cheese, then the two pieces of bacon.
Top with the croissant's top.
Wrap each sandwich individually in plastic wrap and place in a freezer-safe bag,
Place in the freezer until ready to eat.
Preheat the oven to 375, unwrap the sandwich, place it on a baking sheet, and cook for 15 minutes, or until heated through.
