DIY Breakfast Sandwiches

Make-ahead breakfast sandwiches with flaky croissants, fluffy eggs, crispy bacon, and melty cheese. Freezer-friendly and easy to reheat anytime.

Equipment

Ingredients

  • 16 pieces of bacon cooked. I use the precooked bacon from Costco
  • 8 slices of cheddar cheese
  • 16 eggs
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • cup softened salted butter

Instructions

  • In a large bowl, whisk the eggs, salt, and pepper.
  • In a large skillet, cook the eggs over medium-high heat, mixing with a spatula until fluffy.
  • Slice the croissants in half and spread the butter on the bottom of the tops.
  • On the bottom half of the croissant layer with eggs, then a slice of cheese, then the two pieces of bacon.
  • Top with the croissant's top.
  • Wrap each sandwich individually in plastic wrap and place in a freezer-safe bag,
  • Place in the freezer until ready to eat.
  • Preheat the oven to 375, unwrap the sandwich, place it on a baking sheet, and cook for 15 minutes, or until heated through.
  • Serve and Enjoy!

Notes

Recipe Tips:

  1. Use pre-cooked bacon. 
  2. Wrap sandwiches tightly before freezing.
  3. Label your freezer bag with the date.   

Storage Tips:

  1. These will stay fresh in the freezer for around 2-3 months if stored properly. 
  2. Cook the sandwiches in the oven for best results after removing then from the freezer.
