Ingredients

Banana Cookies:

  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon nutmeg
  • cup granulated sugar
  • ¼ cup light brown sugar
  • 1 egg + 1 yolk
  • 1 cup mashed banana
  • 1 ½ teaspoons vanilla

Cream Cheese Frosting:

  • 1 cup powdered sugar
  • 8 oz cream cheese
  • ½ cup salted butter room temp
  • 1 ½ teaspoons vanilla
  • teaspoon salt

Optional Topping:

  • ¼ cup chopped pecans

Instructions

For the Cookie Dough:

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Mix the flour, cornstarch, cinnamon, baking soda, salt, baking powder, and nutmeg in a medium bowl. Set aside.
  • Combine the sugar, butter, and brown sugar in a large mixing bowl. Whisk until well combined and smooth.
  • Add the egg and mix until combined. Then, add the mashed banana and vanilla, mixing until incorporated.
  • Gradually add the dry ingredients to the wet mixture and mix until combined.
  • Use a cookie scoop to portion the dough onto the prepared baking sheet, placing cookies about 2 inches apart.
  • Bake on the center rack for 10-12 minutes. Once baked, remove the cookies from the oven and let them cool slightly before transferring them to a wire cooling rack. Repeat until all the dough is used.

For the Frosting:

  • Combine the powdered sugar, cream cheese, butter, vanilla, and salt in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed for 2 minutes until smooth and fluffy. Scrape down the sides of the bowl as needed to ensure all ingredients are well incorporated.

To finish:

  • Once the cookies have cooled, spread a generous amount of frosting on top of each one. Optionally, you can sprinkle the frosted cookies with cinnamon or chopped pecan pieces.
