Banana Cookies:
- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1 ½ teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ teaspoon baking powder
- ¼ teaspoon nutmeg
- ⅔ cup granulated sugar
- ¼ cup light brown sugar
- 1 egg + 1 yolk
- 1 cup mashed banana
- 1 ½ teaspoons vanilla
Cream Cheese Frosting:
- 1 cup powdered sugar
- 8 oz cream cheese
- ½ cup salted butter room temp
- 1 ½ teaspoons vanilla
- ⅛ teaspoon salt
For the Cookie Dough:
Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.
Mix the flour, cornstarch, cinnamon, baking soda, salt, baking powder, and nutmeg in a medium bowl. Set aside.
Combine the sugar, butter, and brown sugar in a large mixing bowl. Whisk until well combined and smooth.
Add the egg and mix until combined. Then, add the mashed banana and vanilla, mixing until incorporated.
Gradually add the dry ingredients to the wet mixture and mix until combined.
Use a cookie scoop to portion the dough onto the prepared baking sheet, placing cookies about 2 inches apart.
Bake on the center rack for 10-12 minutes. Once baked, remove the cookies from the oven and let them cool slightly before transferring them to a wire cooling rack. Repeat until all the dough is used.
For the Frosting:
Combine the powdered sugar, cream cheese, butter, vanilla, and salt in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed for 2 minutes until smooth and fluffy. Scrape down the sides of the bowl as needed to ensure all ingredients are well incorporated.
