Quick and Easy Mexican Street Corn Dip

– 4 cups corn kernels  – 2 Tablespoons salted butter – ½ cup mayonnaise – 3 Tablespoons sour cream – Juice of half a lime – 1 teaspoon garlic powder – ¼ teaspoon cayenne pepper – ⅔ cup crumbled Cotija cheese


– Melt butter in a large skillet  – Add the corn kernels and saute for 8-10 minutes  – Remove from heat and allow to cool for 10 minutes.


– Next, stir in the mayonnaise, sour cream, lime juice, garlic powder, and cayenne pepper until thoroughly mixed.


– Finally, transfer the corn dip to a serving bowl and garnish with the remaining Cotija cheese and fresh cilantro before serving.
