- 2 cans cream corn
- 2 1/2 cups sweet frozen corn
- 2 8.5 oz boxes Jiffy corn muffin mix
- 2 eggs
- 2 Tablespoons honey
- 2 teaspoons salt
- 8 oz sour cream
- 1 cup cheddar cheese shredded
- 1/2 cup butter melted
Prep your crockpot by spraying it with non-stick spray.
Place all of the ingredients into the crockpot and mix until everything is incorporated.
Cook the mixture on low for 4 hours or high for 2-3 hours. You will know when the casserole is done when the top is set.
Sprinkle with scallions and serve and enjoy!
