Ingredients

  • 2 cans cream corn
  • 2 1/2 cups sweet frozen corn
  • 2 8.5 oz boxes Jiffy corn muffin mix
  • 2 eggs
  • 2 Tablespoons honey
  • 2 teaspoons salt
  • 8 oz sour cream
  • 1 cup cheddar cheese shredded
  • 1/2 cup butter melted

GARNISHES:

  • Diced scallions

Instructions

  • Prep your crockpot by spraying it with non-stick spray.
  • Place all of the ingredients into the crockpot and mix until everything is incorporated.
  • Cook the mixture on low for 4 hours or high for 2-3 hours. You will know when the casserole is done when the top is set.
  • Sprinkle with scallions and serve and enjoy!
