Ingredients

  • 8 oz package cream cheese softened to room temperature
  • 16 oz package bacon cooked drained and chopped
  • 1 bunch green onions chopped, green parts only
  • 1 cup sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 36-48 button mushrooms wash & remove stems

Instructions

PREP OVEN AND BAKING SHEET:

  • Move the oven rack to the middle position and preheat the oven to 375 degrees F.
  • Line a rimmed baking sheet with parchment paper or a silicone baking mat.

PREP MUSHROOMS:

  • Wash the mushrooms, pat them dry, and remove the stems.

MAKE FILLINGS:

  • In a medium bowl combine the cream cheese, chopped bacon, green onions, and cheddar and Parmesan cheese.

STUFF AND BAKE MUSHROOMS:

  • Stuff the mushrooms with the filling and place them on the baking sheet.
  • Bake for 45 minutes.

COOL AND SERVE:

  • Cool the mushrooms for 5 minutes.
  • Garnish with chopped green onion and bacon, both optional, and serve.
