Ingredients

STRAWBERRY SAUCE:

  • 1 cup chopped strawberries
  • ¼ cup granulated sugar
  • 2 Tablespoons water

FILLING:

  • 8 oz package cream cheese softened
  • cup seedless strawberry jam or preserves
  • 1 teaspoon vanilla extract
  • ½ cup strawberries chopped finely

EGG MIXTURE:

  • 5 large eggs
  • 1 cup milk or half-and-half
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract

BREAD:

  • 12 slices thick bread like Texas toast

FOR SERVING:

  • Strawberry sauce
  • Fresh strawberries
  • Syrup
  • Powdered sugar

Instructions

MAKE STRAWBERRY SAUCE:

  • Heat all ingredients in a small saucepan over medium-high heat.
  • Once bubbling, continuously stir until the mixture is thickened, about 2-3 minutes.
  • Remove the saucepan from the heat and set it aside while you make the stuffed french toast.

PREP THE STRAWBERRY CREAM CHEESE FILLING:

  • In a medium bowl, beat the cream cheese on medium speed until fluffy, about 1 minute.
  • Add jam and vanilla and beat until smooth, about 1 minute.
  • Fold in strawberries.

MAKE EGG MIXTURE:

  • In a large bowl, whisk together all the ingredients for the egg mixture until combined.

MAKE STUFFED CREAM CHEESE:

  • Heat a griddle to 350 degrees F and spray with cooking spray. Or, you can heat a large skillet over medium heat.
  • Spread cream cheese mixture onto two slices of bread and make a sandwich with them.
  • Dip bread into the egg mixture, coating both sides.
  • Add the french toast to the griddle or skillet and cook until golden brown, about 2-3 minutes.
  • Flip and continue cooking until golden brown.
  • Repeat with remaining french toast.

SERVE:

  • Serve immediately with strawberry sauce, fresh strawberries, syrup, or powdered sugar.
