STRAWBERRY SAUCE:
- 1 cup chopped strawberries
- ¼ cup granulated sugar
- 2 Tablespoons water
FILLING:
- 8 oz package cream cheese softened
- ⅓ cup seedless strawberry jam or preserves
- 1 teaspoon vanilla extract
- ½ cup strawberries chopped finely
EGG MIXTURE:
- 5 large eggs
- 1 cup milk or half-and-half
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
BREAD:
- 12 slices thick bread like Texas toast
FOR SERVING:
- Strawberry sauce
- Fresh strawberries
- Syrup
- Powdered sugar
MAKE STRAWBERRY SAUCE:
Heat all ingredients in a small saucepan over medium-high heat.
Once bubbling, continuously stir until the mixture is thickened, about 2-3 minutes.
Remove the saucepan from the heat and set it aside while you make the stuffed french toast.
PREP THE STRAWBERRY CREAM CHEESE FILLING:
In a medium bowl, beat the cream cheese on medium speed until fluffy, about 1 minute.
Add jam and vanilla and beat until smooth, about 1 minute.
Fold in strawberries.
MAKE STUFFED CREAM CHEESE:
Heat a griddle to 350 degrees F and spray with cooking spray. Or, you can heat a large skillet over medium heat.
Spread cream cheese mixture onto two slices of bread and make a sandwich with them.
Dip bread into the egg mixture, coating both sides.
Add the french toast to the griddle or skillet and cook until golden brown, about 2-3 minutes.
Flip and continue cooking until golden brown.
Repeat with remaining french toast.
