Easy Chocolate Chip Waffles

WAFFLES:
- 2 cups of all-purpose flour sifted
- 2 ½ teaspoons of baking powder
- ¼ teaspoon of salt
- 3 eggs
- 3 Tablespoons of sugar
- 2 cups of milk
- 5 Tablespoons of melted butter
- 1 teaspoon of vanilla
- 1 cup of semi-sweet chocolate chips

MAKE WAFFLE BATTER:
Place the flour, baking powder, and salt in a bowl and mix until combined.
In a stand mixer with a whisk attachment, whisk the sugar and the egg yolks until combined.
Add the milk, butter, and vanilla until thoroughly blended.
Mix the flour mixture with the egg yolk mixture until thoroughly combined.
Transfer the mixture to a large bowl.
Clean the stand mixer bowl so you can use it for the egg whites.
Add egg whites to the now clean bowl and beat on high speed until stiff peaks form. This will take approximately 1-2 minutes.
Fold the egg whites into the batter.
Fold in the chocolate chips. Be careful not to overmix.
COOK WAFFLES:
Once you are ready, add non-stick spray to both sides of your waffle maker.
Add 1 cup of the batter to the waffle maker.
Close your waffle maker and cook the waffles per the manufacturer’s instructions. Usually, this will take 2 - 3 minutes per waffle.
Repeat with the remaining batter.
Serve immediately and garnish with chocolate syrup, fruit, powdered sugar, or whipped cream, all optional.
