Ingredients

FOR SERVING:

  • 1 Tablespoon minced fresh cilantro

Instructions

COOK CORN:

  • Melt butter in a large skillet over medium high heat.
  • Add the corn kernels and saute for 8-10 minutes until the kernels begin to slightly brown and caramelize.
  • Remove from heat and allow to cool for 10 minutes.

MAKE DIP:

  • Stir in the mayonnaise, sour cream, lime juice, garlic powder and cayenne pepper until well combined.
  • Set aside a couple tablespoons of the Cotija cheese and mix the rest into the corn mixture.

TO FINISH:

  • Transfer the corn dip to a serving bowl and garnish with the remaining Cotija cheese and fresh cilantro.
  • Serve immediately or refrigerate until ready to serve, enjoy!
