Grinch Pancakes

Grinch pancakes are whimsical and delicious, bringing holiday cheer to breakfast. They're fun for kids and adults alike!

Instructions

MAKE GLAZE:

  • Beat together cream cheese, powdered sugar and vanilla extract until smooth.
  • Add milk 1 tablespoon at a time until desired consistency.

MAKE WHIPPED CREAM:

  • In a large bowl or a bowl of the stand mixer, beat whipping cream until soft peaks form.
  • Add powdered sugar and vanilla and continue beating until stiff peaks form.
  • Stir in a few drops of food coloring at a time until desired color is reached.
  • Transfer the whipped cream to piping bag fitted with a large star or round tip.
  • Place in the fridge until ready to use.

MAKE PANCAKE BATTER:

  • Add flour, sugar, baking powder and salt to a large measuring cup or mixing bowl.
  • Whisk until combined.
  • Add eggs, milk and, oil to the dry ingredients and whisk until well combined.
  • Stir in a few drops of food coloring at a time until desired color is reached.

COOK PANCAKES:

  • Heat griddle to medium heat and spray with nonstick cooking spray.
  • Scoop pancake batter onto the hot griddle and cook 4-5 minutes or until golden brown.
  • Flip and cook on other side 2-3 minutes or until golden brown.
  • Remove from griddle and keep warm while repeating with remaining pancake batter.

TO FINISH:

  • When all the pancakes are done, assemble them by stacking 2 pancakes.
  • Spoon glaze over top.
  • Pipe on whipped cream.
  • Decorate with red heart sprinkles.
  • Serve immediately.
