Add tahini, water, and lemon juice to a food processor. Pulse for 30 seconds.
Add garlic and chickpeas and pulse for 30 seconds. The chickpeas will be broken into small pieces.
With the food processor running, slowly drizzle olive oil through the feed tube. Let the processor run for 10-20 seconds, or until it is smooth and creamy.
Season with salt and pepper, to taste.
Transfer the hummus to a serving bowl. Drizzle with olive oil and garnish with parsley or paprika (all optional).
Serve or store in an airtight container in the refrigerator for up to 5 days.
