- 1 ½ pound lean ground beef
- 1 large onion chopped
- 48 oz can tomato juice
- 10 oz can Rotel
- 2 Tablespoons sugar or a little less depending on taste
- 1 ½ cup frozen corn
- 3 Tablespoons taco seasoning
- (2) 16 oz cans chili beans
FOR SERVING: (all optional)
- Tortilla chips or strips
- Corn chips
- Sour cream
- Shredded cheese
- Avocado diced
- Jalapenos sliced
In a large pan, cook the ground beef and onion until the beef is browned.
Drain off the grease.
While the beef is cooking, add the remaining ingredients to a large heavy-bottomed pot over high heat.
Add the beef and onion to the pot and stir.
Bring the mixture to a low boil, and then reduce heat to low.
Simmer the soup for 20 minutes.
Serve with toppings of your choice.
- Store leftovers in the refrigerator.
- You can make this in the crockpot. Once the beef and onion are cooked, add everything to a slow cooker and cook for 4 hours on LOW or 2 hours on HIGH.
