Taco Soup

Ingredients

  • 1 ½ pound lean ground beef
  • 1 large onion chopped
  • 48 oz can tomato juice
  • 10 oz can Rotel
  • 2 Tablespoons sugar or a little less depending on taste
  • 1 ½ cup frozen corn
  • 3 Tablespoons taco seasoning
  • (2) 16 oz cans chili beans

FOR SERVING: (all optional)

  • Tortilla chips or strips
  • Corn chips
  • Sour cream
  • Shredded cheese
  • Avocado diced
  • Jalapenos sliced

Instructions

  • In a large pan, cook the ground beef and onion until the beef is browned.
  • Drain off the grease.
  • While the beef is cooking, add the remaining ingredients to a large heavy-bottomed pot over high heat.
  • Add the beef and onion to the pot and stir.
  • Bring the mixture to a low boil, and then reduce heat to low.
  • Simmer the soup for 20 minutes.
  • Serve with toppings of your choice.

Notes

  • Store leftovers in the refrigerator.
  • You can make this in the crockpot. Once the beef and onion are cooked, add everything to a slow cooker and cook for 4 hours on LOW or 2 hours on HIGH.
