Gone All Day Stew

Gone All Day Beef Stew is a recipe our grandpa first made over 30 years ago. It’s a comfort food classic that feeds 12 people, making it perfect for Sunday family dinners.

Ingredients

STEW MIXTURE:

  • 2 pounds beef stew meat cut into 1-inch pieces
  • 2 large onions roughly chopped and pieces separated
  • 5 large carrots peeled and sliced into rounds
  • 4 large celery stalks sliced
  • 16 ounces button mushrooms sliced
  • 2 large sweet potatoes peeled and chopped into 1-inch cubes
  • 2 pounds petite red, yellow, or white potatoes cut into quarters

SAUCE:

  • 23.2 oz can Campbell’s Tomato Condensed Soup
  • 2 cups water
  • 15 oz can tomato sauce
  • ½ cup red cooking wine or beef broth
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 Tablespoons cornstarch
  • 2 beef bouillon cubes
  • 2 bay leaves

Instructions

PREP OVEN:

  • Move the oven rack to the middle position and preheat the oven to 275 degrees F.

MIX TOGETHER STEW:

  • In a large roasting pan, place the stew meat and all of the vegetables.
  • In a large bowl, whisk together tomato condensed soup, water, tomato sauce, cooking wine, salt, pepper, and cornstarch.
  • Pour the sauce mixture over the meat and vegetables.
  • Stir until the meat and vegetables are coated in the sauce.
  • Nestle the beef bouillon cubes and bay leaves into the mixture.
  • Cover the roasting pan with foil.

COOK:

  • Cook for 4-5 hours.

SERVE:

  • Remove the foil and stir. Remove the bay leaves.
  • Serve with bread.

Notes

If you like your stew on the thicker side, use 3 tablespoons of cornstarch in the recipe above.
