PREP DOUGH AND FILL:
Roll one tube of pizza dough out onto a large cookie sheet.
Using a small spatula for guidelines (or use a ruler), cut strips on both long sides of the dough, spaced about 2-inches apart, leaving 2-3 inches in the center that is uncut.
Spoon pizza sauce down the center.
Add ½ cup cheese.
Then add toppings (if using) and another ½ cup cheese.
WRAP AND BAKE:
Wrap the calzone beginning at the bottom and slightly overlapping the dough.
Repeat with the remaining pizza dough tube, filling, and toppings.
In a small bowl, whisk together egg and 1 tablespoon water.
Brush egg wash over the calzones.
Bake for 25-30 minutes, or until golden brown, rotating pans halfway through baking.
COOL AND SERVE:
Remove from oven and let the calzones cool for 5 minutes.
To serve as Mummy for Halloween, slice black olive to make eyes.
