- 32 large Medjool dates
- 32 roasted whole almonds
- ½ cup goat cheese
- 16 slices bacon about 14 ounces halved crosswise
GARNISH:
- sliced green onion optional
Place the oven rack in the middle position and preheat the oven to 400 degrees F. Set a wire rack on a baking sheet that has been covered with foil; set aside.
Use a knife to cut a slit lengthwise into a date and take out the pit. Gently stretch the opening you just cut to allow room for the stuffing.
Stuff the dates with 1 almond and about 1 teaspoon full of goat cheese each.
Pinch the dates closed and wrap each date in a piece of bacon before setting them on the baking sheet. The bacon should be wrapped tightly.
Bake the stuffed dates for 25-30 minutes, or until the bacon is browned and crisp. Turn each date halfway through baking.
Place the dates on a serving platter and sprinkle with sliced green onions (optional).
Serve the dates warm or at room temperature.
