Mexican Lasagna

Ingredients

MEXICAN LASAGNA:

  • 1 Tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small ½ cup yellow onion, finely diced
  • 2 large garlic cloves minced
  • 2 Tablespoons taco seasoning
  • 2 10 oz cans Rotel
  • 15 oz can Southwest corn drained
  • 15 oz can black beans rinsed and drained well
  • 12 8 inch flour tortillas
  • 16 oz can refried beans
  • 3 cups shredded cheese cheddar or Mexican blend

TOPPINGS:

  • Salsa
  • Sour cream
  • Guacamole
  • Cilantro
  • Green onions
  • Avocado

Instructions

PREP OVEN AND PAN:

  • Move the oven rack to the middle position and preheat the oven to 375 degrees F.
  • Spray a 13x9 inch baking dish with nonstick cooking spray.

COOK FILLING:

  • Heat olive oil to a large skillet and cook ground beef until almost all browned.
  • Add onion and cook until the beef is completely browned.
  • Add garlic and cook for 30-60 seconds, or until fragrant.
  • Stir in taco seasoning until well combined.
  • Add Rotel tomatoes, corn, and black beans and stir until well combined.
  • Bring the mixture to a simmer and cook for 10-15 minutes or until all the flavors are combined.

ASSEMBLE:

  • Layer tortillas on the bottom of the baking dish, overlapping slightly and cutting to fit if necessary.
  • Spread a layer of refried beans on top of the tortillas.
  • Add ¼ of the cheese over the beans.
  • Next, top with ⅓ of the meat mixture.
  • Repeat the layers, ending with a layer of tortillas.
  • Top with the remaining cheese.

BAKE AND SERVE:

  • Bake for 15-20 minutes or until the cheese is melted and bubbly.

Notes

Serve with the toppings of your choice.
