Raspberry Cranberry Jello Salad

This Raspberry Cranberry JELLO Salad is an easy and festive side dish or dessert. It keeps well so you can make it up to three days in advance.

Equipment

  • large mixing bowl
  • Liquid measuring cup
  • mixing spoon
  • bundt pan or 6-cup ring mold
  • serving platter

Ingredients

  • 6 ounces raspberry gelatin (2) 3-ounces packages
  • 1 cup boiling water
  • 14 oz can whole-berry cranberry sauce
  • 8 oz can crushed pineapple undrained
  • 1 cup orange juice

GARNISHES:

  • whipped cream
  • cranberries
  • orange zest
  • chopped and toasted pecans

Instructions

  • In a large bowl, dissolve gelatin in boiling water. Stir in the cranberry sauce, pineapple and orange juice.
  • Pour into a 6-cup ring mold or bundt pan coated with cooking spray.
  • Cover and refrigerate until set, about 6 hours or overnight.
  • Unmold onto a serving platter.
  • Garnish and serve.

Notes
