PREP OVEN AND PAN:
Move the oven rack to the middle position.
Preheat oven to 350 degrees F.
Spray a 2-quart baking dish with non-stick cooking spray.
COOK CAULIFLOWER:
Bring a large saucepan with salted water to a boil over medium-high heat.
Add cauliflower and cook just until tender, about 4-5 minutes.
Drain cauliflower and add to a large bowl.
COOK BACON:
Meanwhile, fry bacon in a medium skillet over medium heat until crisp.
Remove from the pan onto a paper towel-lined plate.
When bacon is cool enough to handle, crumble.
Add the bacon to a large bowl with the cauliflower.
ASSEMBLE CASSEROLE:
In a small bowl, whisk together the soup, sour cream, and cheese
Pour over cauliflower and stir to combine.
Season with salt and pepper.
Transfer to prepared baking dish.
Melt the butter in a small microwave-safe bowl.
Add Ritz crumbs or panko bread crumbs and stir to combine.
Sprinkle the mixture over the cauliflower.
