Instructions

PREP OVEN AND PAN:

  • Move the oven rack to the middle position.
  • Preheat oven to 350 degrees F.
  • Spray a 2-quart baking dish with non-stick cooking spray.

COOK CAULIFLOWER:

  • Bring a large saucepan with salted water to a boil over medium-high heat.
  • Add cauliflower and cook just until tender, about 4-5 minutes.
  • Drain cauliflower and add to a large bowl.

COOK BACON:

  • Meanwhile, fry bacon in a medium skillet over medium heat until crisp.
  • Remove from the pan onto a paper towel-lined plate.
  • When bacon is cool enough to handle, crumble.
  • Add the bacon to a large bowl with the cauliflower.

ASSEMBLE CASSEROLE:

  • In a small bowl, whisk together the soup, sour cream, and cheese
  • Pour over cauliflower and stir to combine.
  • Season with salt and pepper.
  • Transfer to prepared baking dish.
  • Melt the butter in a small microwave-safe bowl.
  • Add Ritz crumbs or panko bread crumbs and stir to combine.
  • Sprinkle the mixture over the cauliflower.

BAKE:

  • Bake for 25-30 minutes or until the casserole is bubbly and the bread crumbs are browned.

GARNISH AND SERVE:

  • Garnish with parsley or chives, both optional. Serve.
