AVOCADO RANCH DIPPING SAUCE:

mashed avocado

Instructions
MAKE DIPPING SAUCE:
Prepare the avocado sauce by mixing the sauce ingredients. Chill until ready to use.
MAKE FILLING:
Heat olive oil in a large skillet over medium-high heat.
Add onions and red bell peppers. Sauté for 2-3 minutes until onions are softened and translucent.
Add diced chicken, black beans, spinach, corn, and green chiles to the skillet. Cook for 1-2 minutes until warmed through.
Sprinkle cheese over the mixture in the skillet. Stir until melted.
Remove from heat.
Stir in cilantro to combine.
ASSEMBLE EGG ROLLS:
Divide the mixture evenly among flour tortillas.
Roll the tortillas and fold in the ends to create "egg rolls."
PREHEAT OIL:
In a large frying pot, heat several inches of vegetable oil.
FRY EGG ROLLS:
Place the rolled tortillas into the hot oil in batches and cook for 2-3 minutes per side until golden brown.
DRAIN AND SERVE:
Remove cooked tortilla rolls and drain on a paper towel.
Slice the tortilla rolls in half and serve warm with the dipping sauce. Enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
