Ingredients

SMOKED NACHOS:

  • 1 whole rotisserie chicken shredded, about 3 cups
  • 13 oz bag tortilla chips
  • 15.5 oz can black beans drained and rinsed
  • 1 cup whole corn kernels thawed if frozen
  • 2 cups shredded cheese cheddar, Monterey Jack, or a blend, more if you like
  • 8 oz jar pickled jalapenos
  • ½ cup red onion diced

FOR SERVING: (all optional)

  • Salsa
  • Guacamole
  • Sour Cream
  • BBQ Sauce
  • Fresh cilantro
  • Any toppings you like

Instructions

PREP SMOKER:

  • Preheat the smoker to 350 degrees F.

ASSEMBLE NACHOS:

  • Spread a layer of tortilla chips on a large baking sheet.
  • Add a layer of shredded chicken over the chips.
  • Sprinkle black beans and corn on top of the chicken.
  • Next, add a layer of shredded cheese.
  • Repeat the layers.
  • Then add pickled jalapenos and red onions on top.
  • Place baking sheet on the preheated smoked and cook for about 15-20 minutes or until the cheese is melted and bubbly.
  • Serve immediately with toppings of your choice.

Notes

You can easily adjust the ingredients and topping to your liking. Add other toppings like diced tomatoes, avocado, or green onions.
