Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar packed
  • 2 large eggs room temperature
  • 2 cups crushed potato chips
  • 1 cup butterscotch chips or semi-sweet chocolate chips

Instructions

PREP OVEN AND BAKING SHEETS:

  • Move the oven rack to the middle position.
  • Preheat the oven to 350 degrees F.
  • Line your baking sheets with a silicone mat or parchment paper.

MAKE COOKIE DOUGH:

  • In a small bowl, whisk together the flour and baking soda.
  • In a separate large bowl, cream the butter and both sugars until the mixture becomes light and fluffy.
  • Beat in the eggs until well combined, then gradually add the flour mixture and stir until well combined.
  • Add the potato chips and butterscotch chips, and mix until combined.

BAKE AND COOL COOKIES:

  • Use a cookie dough scoop or tablespoon to divide the batter, then bake for 8-10 minutes until golden brown.
  • After baking, let the cookies cool for 3 minutes on the baking sheet before transferring them to a wire rack to cool completely.
  • Repeat with the remaining cookie dough.
