- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup unsalted butter softened
- ¾ cup granulated sugar
- ¾ cup brown sugar packed
- 2 large eggs room temperature
- 2 cups crushed potato chips
- 1 cup butterscotch chips or semi-sweet chocolate chips
PREP OVEN AND BAKING SHEETS:
Move the oven rack to the middle position.
Preheat the oven to 350 degrees F.
Line your baking sheets with a silicone mat or parchment paper.
MAKE COOKIE DOUGH:
In a small bowl, whisk together the flour and baking soda.
In a separate large bowl, cream the butter and both sugars until the mixture becomes light and fluffy.
Beat in the eggs until well combined, then gradually add the flour mixture and stir until well combined.
Add the potato chips and butterscotch chips, and mix until combined.
BAKE AND COOL COOKIES:
Use a cookie dough scoop or tablespoon to divide the batter, then bake for 8-10 minutes until golden brown.
After baking, let the cookies cool for 3 minutes on the baking sheet before transferring them to a wire rack to cool completely.
Repeat with the remaining cookie dough.
