Ingredients

  • 15 oz can corn drained
  • 15 oz can black beans rinsed and drained
  • 15 oz can black eye pea beans rinsed and drained
  • 1 cup mixed bell peppers diced
  • 2 medium Roma tomatoes diced
  • ½ cup red onion diced
  • ¼ cup sliced green onions
  • 1 small jalapeno seeds removed and diced
  • ¼ cup olive or avocado oil
  • 2 Tablespoons honey
  • Juice of half a lime
  • ½ teaspoon lime zest
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 Tablespoons chopped fresh cilantro

Instructions

  • Combine all the ingredients in a large serving bowl and mix until combined.
  • Add salt and pepper to taste.
  • You can either serve the salad immediately or let it marinate in the fridge until you're ready to serve.
  • Serve with tortilla chips. Enjoy!

Notes

This recipe makes about 8 cups. 
This dish can be prepared a day ahead of time.
