Ingredients

COOKIE BARS:

  • ½ cup butter room temp
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup rainbow sprinkles

FROSTING;

  • ½ cup unsalted butter room temp
  • 3 cups confectioners sugar
  • 4 Tablespoons milk
  • 2 teaspoons vanilla
  • ½ cup rainbow sprinkles
  • food coloring optional

Instructions

PREP OVEN AND PAN:

  • Move oven rack to the middle position and preheat the oven to 350°F.
  • Spray a 9x13-inch pan with cooking spray.

MAKE COOKIE BARS:

  • Cream the butter, sugar, brown sugar, eggs, and vanilla together in a large bowl.
  • In a separate bowl, combine the flour, cornstarch, baking powder, and salt together and stir into the wet ingredients.
  • Gently fold in the sprinkles.
  • Spoon the dough into the pan.
  • Wet your fingers and press the dough into the pan.

BAKE AND COOL:

  • Bake for 20 minutes or just until the edges are lightly colored but the top is not browned.
  • Cool completely, about 90 minutes.

MAKE FROSTING:

  • Beat the butter, confectioners sugar, milk, and vanilla together in a bowl until light and fluffy, about 2-3 minutes.
  • Spread the frosting over the cooled bars.
  • Add the sprinkles.
  • Cut into 20 bars and serve.

Notes

  • Do not overbake. These are best when removed a minute or two early from the oven.
  • You can make these with Halloween sprinkles or Christmas.
  • This dough is thick and won’t spread easily. Wetting your hands with water is best to prevent the dough from sticking, and press it out evenly in the pan.
  • You can color the icing with a few drops of food coloring for a great variation.
