Ingredients

  • 1 box chocolate cake mix
  • 2 large eggs
  • cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 10- ounce package peanut butter chips

Instructions

PREP BAKING SHEETS:

  • Prepare baking sheets with parchment paper and set aside.

MAKE COOKIE DOUGH:

  • In a large bowl, combine the chocolate cake mix, eggs, oil, and vanilla. Mix well.
  • Stir in the peanut butter chips, reserving about ½ cup for later.
  • Cover the bowl with plastic wrap and chill for 20 minutes.

PREP OVEN:

  • Move the oven racks to the lover-middle and upper-middle positions and preheat the oven to 350 degrees.

BAKE COOKIES:

  • Scoop the dough into balls and place them on the prepared baking sheets. Lightly press down on the tops.
  • Add a few extra peanut butter chips to the top of each cookie.
  • Bake for 8-10 minutes, rotating the pans halfway through baking. Do not overbake.

TO FINISH:

  • Remove the baking sheet from the oven and let the cookies cool completely on the baking sheets before serving, about 1 hour.

Notes

Cake mix cookies tend to be very delicate when they first come out of the oven. Let them cool completely before removing them from the baking sheet.
