SHORTBREAD DOUGH:
- 1 cup unsalted butter
- 1 teaspoon vanilla extract
- ⅔ cup white granulated sugar
- 2 cups all-purpose flour
MAKE COOKIE DOUGH:
In a stand mixer or using an electric mixer, combine the butter, vanilla, and sugar until the mixture is smooth and creamy.
Slowly incorporate the flour until the mixture resembles a slightly wet, sandy mixture.
Divide the cookie dough into 24 balls the size of about two tablespoons.
FINISH COOKIES:
Once the cookies have completely cooled, pair them together and place a spoonful of dulce de leche between each pair of cookies.
Serve immediately and enjoy!
- It is important to allow the cookies to fully cool before removing them from the cookie sheet and adding the dulce de leche to prevent the cookies from crumbling.
