Chicken Parmesan Subs Recipe

These Chicken Parmesan Subs are a quick and easy weeknight dinner that the entire family loves. We just can't wait to sink our teeth into one of these sandwiches come dinnertime!

Ingredients

  • 24 oz bottle Marinara sauce
  • 6 John Soules Foods Fully Cooked Chicken Cutlets you'll need 1 ½ (12 oz) packages
  • ¼ cup grated Parmesan cheese
  • 1 ¼ cup grated mozzarella cheese
  • 6 hoagie rolls
  • 3 Tablespoons olive oil
  • Fresh basil leaves optional

FOR SERVING:

  • Caesar salad optional

Instructions

PREP AND PREHEAT THE OVEN:

  • Move the oven rack to the middle position and preheat the oven to 375 degrees F.

ASSEMBLE THE CHICKEN PARMESAN:

  • Add all but 1 cup of the marinara sauce to the bottom of a 9x13-inch glass baking dish.
  • Add 6 chicken cutlets on top of the sauce.
  • Evenly distribute the remaining 1 cup of sauce over the chicken cutlets.
  • Evenly distribute the Parmesan and mozzarella cheese over the sauce.

BAKE AND BROIL:

  • Bake for 15 minutes.
  • While the chicken parmesan is baking, split the hoagie rolls in half and place them on a foil-lined baking sheet. Place them, so both of the cut sides of the bread are facing up.
  • Brush the rolls with olive oil.
  • Once the chicken comes out of the oven, heat the broiler to HIGH.
  • Place the hoagie rolls under the broiler until they're golden brown, about 1-2 minutes. Watch them carefully, because they can go from golden brown to burnt in a matter of seconds!

TO FINISH:

  • Spoon some of the sauce on the bottom of a hoagie roll.
  • Add a chicken cutlet on top.
  • Add 2-3 basil leaves (optional), and add the top hoagie roll.
  • Serve with a Caesar salad (optional) and enjoy!
