INSTRUCTIONS
- First, preheat the oven and spray the casserole dish with cooking spray.
- Next, make the egg mixture.
- Assemble the casserole by layering the ham, cheese, tater tots, and egg mixture. Refrigerate overnight.

EGG MIXTURE:
- 15 large eggs

- ⅛ teaspoon salt
- Dash of pepper

- 6 slices bacon cooked crisp and crumbled into pieces

Instructions
PREHEAT OVEN AND PREP CASSEROLE DISH:
- Move the oven rack to the middle position and preheat the oven to 350 degrees F.
- Spray a 9 x 13-inch casserole dish with cooking spray.
MAKE EGG MIXTURE:
- Whisk together the eggs, half-and-half, and seasonings in a large mixing bowl. Stir until combined.
ASSEMBLE CASSEROLE:
- Evenly spread the diced ham on the bottom of the dish. Cover the ham with ¾ of the cheeses.
- Completely cover the cheese with the tater tots arranged in neat rows.
- Top the tater tots with the egg mixture and then refrigerate overnight or until ready to bake. If you’re baking right away, then you don’t need to refrigerate the casserole.
BAKE:
- Bake uncovered at 350 degrees F for 45 minutes.
- Remove the casserole and top with the remaining cheese and crumbled bacon. Bake for another 5-10 minutes.
COOL AND SERVE:
- Place the casserole on a wire rack to cool for 5 minutes. Serve with toppings (all optional).
