Mexican Fruit Salad
When summer hits, we want nothing to do with a hot stove. It is all about Crock-Pots, grilling, and loads of fresh fruit! Fresh, in-season fruit is our absolute favorite. We go through a ton of strawberries and a lot of watermelons every summer.
The best is when summer fruit sales are in full swing at the grocery store. This means we can stock up on our favorite fruit.
We LOVE to make a Mexican Fruit Salad with all the in-season fresh fruit. It’s such a fun twist on classic fruit salad. Here’s the other great thing, it’s healthy! Yay for food that tastes like a dessert but is good for you!
During the summer, we spend a lot of time out at the pool. It is so easy to quickly whip up a bowl of Mexican Fruit Salad to enjoy while sitting poolside. A bowl of this fresh fruit is seriously so refreshing.
We also love how versatile this recipe is. If you have other fruit that you love (or find on sale) like strawberries or kiwis, then add them to the salad! Love cantaloupe? Slice it up and add it in! To finish off the fruit salad, sprinkle a little bit of chile-lime seasoning on top.
The savory heat contrasts nicely with the sweet, refreshing flavors of pineapple, watermelon, mango, and papaya. This salad is perfect for potlucks, BBQs, or any weeknight meal. Or, you can do as we do and sneak a bowl as you enjoy some alone time by the pool.

Instructions
- First, add the fruit to a large serving bowl.
- Next, squeeze in the lime juice and gently toss to coat everything.
- Then, sprinkle with chile-lime seasoning to taste.
- Finally, garnish with lime wedges and mint sprigs.
